St. Thomas Aquinas: A Culinary Pilgrimage

Journey through history, one course at a time as we celebrate the Feast of St. Thomas Aquinas. This immersive four-course wine dinner follows the footsteps of the "Angelic Doctor," charting a course through the regions that defined his life’s journey from his noble beginnings in Southern Italy to his influential years in Paris. Each course is carefully paired with regional wines to reflect Aquinas’s travels.

The Itinerary

I. The Early Years: Sicily

Arancini al Burro: Ham and mozzarella stuffed arancini served with bechamel. A nod to the Mediterranean flavors of the Kingdom of Sicily where Thomas was born.

II. Academic Foundations: Naples

Zuppa di Pesce alla Napoletana: Fish stew with cod, mussels and clams in a garlicky white wine and tomato broth. This course honors his time studying in Naples.

III. The French Years: Paris

Oxtail Ragu: with Pappardelle & Bordeaux Onions. A rich, savory transition to France representing the intellectual height of his career in the heart of Paris.

IV. The Final Works: Orvieto 

Panpepato: A traditional "peppered bread" from the Umbrian region. This spiced cake, dense with candied fruits and nuts and draped in dark chocolate, offers a complex, bittersweet finish to our pilgrimage.
